I just half hazardly added some stuff about mixing models and unmixing algorithms. It would be great is someone could update these better. The reason I included this material is because it is generally not all talked about in one source.
One thing that's bugged me about this is that it seems dominated by talk of satellite-based imaging, esp. of Earth. Some of the same techniques are in very active use in ground-based systems, particularly microscopy... and those of us who do it also use the term "imaging spectroscopy" (distinct from spectroscopy which isn't intended to produce spatially-resolved datasets).
